Club sandwich with Fromager d’Affinois Truffle Cheese
– 18 slices of crustless sandwich bread
– 360 g (13 oz) of sliced cooked chicken
– 6 Batavia lettuce leaves
– 3 tomatoes
– 6 eggs
– 240 g (1/2 lb) of Fromager d’Affinois Truffle cheese
– 80 g (3 oz) of mayonnaise with whole grain mustard
Preheat the oven grill.
Toast the sandwich bread slices.
Boil the eggs for 9 minutes then peel and cut into slices.
Slice the tomatoes and shred the lettuce.
Mix the mayonnaise together with the lettuce.
Cut the cheese into slices.
Divide the tomatoes and eggs and half of the seasoned lettuce over 6 slices of sandwich bread.
On the remaining 6 slices of sandwich bread, add the rest of the lettuce, the chicken and the slices of Fromager d’Affinois Truffle cheese.
Stack one dressed slice on top of another, then top with a plain slice.
Secure with one or two toothpicks.
Cut into halves or quarters.
